Power To The Plant Triple Berry Oatmeal Muffins

Ingredients:

  • 1 Egg or (1 Flax Egg: 1 Tbsp Ground Flaxseed + 3 Tbsp Filtered Water)
  • 3 Very Ripe Bananas (Mashed)
  • 1/2 Cup Unsweetened Yogurt (Almond Milk Yogurt For Example)
  • 1/4 Cup Coconut Sugar (Or Sugar of Choice)
  • 3/4 Cup Almond Milk
  • 1 Tbsp Lemon Juice
  • 1 3/4 Cup Flour of Choice
  • 1/2 Cup Rolled Outs
  • 1 Full Scoop of Power To The Plant Protein Powder
  • 2 tsp Baking Powder
  • 1 1/4 Cup Mixed Berries (Strawberries, Blueberries, Raspberries)
  • Cinnamon To Taste

Preparation: 

  1. Preheat oven to 350°F and line a muffin tin with liners or spray with nonstick spray.
  2. In a small bowl, mix together ground flaxseed and water and set aside.
  3. Next, mash the bananas into the flaxseed mixture and add coconut sugar, almond milk, and yogurt.
  4. Sift in the flour, protein powder, baking powder, and cinnamon and toss to combine. Mix in the oats.
  5. Pat the berries dry and gently mix into the batter until evenly distributed. If the batter is too dry, add a splash of unsweetened almond milk here. You want the batter to be thick and scoopable and not runny.
  6. Fill each muffin cup ~3/4 way full. Top with fresh berries and more sugar, if desired.
  7. Bake for 22-25 minutes, or until a toothpick comes out clean.
  8. Allow muffins to cool for 10 minutes, then remove from pan.
  9. Store cooled muffins in an airtight contain in the fridge for up to one week and freeze for long term storage.
